Where Is Your Coffee From? How Different Origins Can Change Your Cup

Coffee's origin has an impact on the way we roast it.

Today, we live in a multicultural world that has filled our lives with contrasts and new experiences. Back in the day, people mostly knew only about their traditions and ways of life, having little to no contact with other cultures. However, between the 20th and 21st century, that changed quite rapidly. The third wave of coffee marked a period in which coffee drinkers became influenced by these changes and started to take an interest in their coffee's details and specifications. How was it harvested? Which methods were used for processing it? And one very special and important question: where do those coffee beans come from?

Just like any other plants, coffee trees not only come in different species, but they’re also heavily influenced by climate conditions of the region in which they grow. Actually, you can’t grow coffee plants anywhere you like. They require weather that’s neither too cold nor too hot for them to grow healthy, as well as soils that are rich in nutrients. The better the climate is, the better the resulting coffee bean will be. And of course, the better it will taste.

For example, coffee cherries harvested in colder climate conditions and higher altitudes will ripen slower and develop more sugars. This means that once the beans are roasted, they’ll have a sweet flavor and they’ll feel denser and firmer. You can find these types of beans in the mountainous regions of Colombia, Costa Rica, and Ethiopia. On the other hand, Brazilian, Jamaican and Hawaiian coffee is generally grown at lower altitudes (around 900 meters above sea level). Roughly speaking, any altitude above 4.000 ft. A.S.L. is considered high. This is how your coffee can change depending on which height it was farmed:

Below 2,500 feet (762 meters) will be soft, mild, simple, and bland.
Around 3,000 feet (914 meters) will be sweet and smooth.
Around 4,000 feet (~1,200 meters) may have citrus, vanilla, chocolate, or nutty notes.
Above 5,000 feet (~1,500 meters) might be spicy, floral, or fruity.

Understanding how origins can change your cup o’ joe is even more complex than just looking at climate conditions. Acidity, flavors, and earthiness are all characteristics that change depending on a specific country’s coffee culture and traditions. Well-balanced coffees, with chocolate and hazelnut notes, are very popular all across America. East African coffee production tends to be juicy and fruity. Kenyan coffee, for example, is very tea-like and acidic.

Within every country, a universe of microclimates exists, altering coffee structure depending on different regions. Indonesia is known for its spicy coffee beans, as well as their earthy ones. And Brazil is so big and has so many different harvest seasons that it’d take a while to know all nuances and characteristics from all of its production.

The Most Unusual Ways to Drink Coffee: When Regular Milk and Sugar Aren’t Enough

Coffee drinks have conquered the world, and there are more ways to enjoy them than you ever imagined!

Coffee+Sea salt
This Taiwanese invention, created by 85C Bakery Cafe, is as ambitious as their palate. Sea salt coffee was supposedly inspired by the Taiwanese habit of sprinkling salt to fruits, like watermelons and pineapple, to bring out their sweetness.


This drink is made by marinating unrefined salt in a thick cream that will then join a light Arabica brew with pre-added sugar. To truly enjoy this mixture, you need to taste its salty foam first and then dive into coffee's creamy and sweet flavors.


Now, if you want to add to this experience, you definitely shouldn’t let pass the opportunity to try a sea salt caramel mocha. Salt will enhance the caramel's and chocolate's sweetness so well that your views on coffee will probably change forever! You can make this recipe and add cocoa to it, or you can buy it already flavored. Dare to try it?

Coffee+Eggs
Vietnamese and Scandinavian cultures might seem very different from each other, but one thing they share is their love for this strange mix. However, each one of their versions is truly unique.


Vietnamese egg coffee is made by whipping egg yolk and condensed milk together, producing a thick and creamy mixture. Black coffee is then poured over the top and left to sink to the bottom.


On the other hand, Scandinavian egg coffee is made, not only with egg's yolk but also with its shell. It’s actually really easy to brew. All you need to do is bring water to a boil while adding coarse coffee grounds into a bowl. Break an egg into the coffee grounds (including its shell) and mix thoroughly. Once water is boiling, add the mixture to the water and stir well. Simmer for five minutes and then add a cup of cold water. The final result will be smooth and strong! Sounds good?


Coffee+Cheese
For the next one, we’re staying on the same side of the world. We owe this curious mix to the Swedish and Finnish. Kaffeost, as they call it, is the tradition of diving grilled cheese into hot coffee. The result will taste similar to a tiramisu, and it’s perfect to make a dessert out of your espresso. As weird as it might sound, this combination has gained popularity across the world. It’s prepared by simply mixing 2 ounces of espresso with 6 ounces of tonic water and ice. Coffee+Lemon or Lime
If you’re feeling more adventurous than ever, this highly acidic brew might be your perfect choice for the day. You can try the one called Guillermo, which consists of two shots of hot espresso poured over a couple of slices of lime; or the one called Espresso Romano, which is just a shot of espresso with a slice of lemon served on the side. There you have it! Both of them go perfectly with fruity coffee beans. You can serve them with or without milk and either hot or with ice cubes.

Mazagran: Portugal’s Way of Coffee

Mazagran is born due to the need of a cold beverage to resist the heat in Algeria during the 1840 war.

The hot flavor of freshly brewed coffee really motivates people to start their day in a positive mood. But as much as we’d like to admit it, not everyone loves the taste of hot coffee, and would rather have a cold drink instead. For those who’d rather have a cold beverage, we have a refreshing alternative called Mazagran, an iced coffee recipe.
Mazagran is a cold drink prepared with coffee (brewed hot and then iced), that is served in a tall glass filled with ice cubes. Generally, people add water to the mixture to dilute the taste of coffee in the beverage and get a softer taste.
The source of this drink is from the 1840’s war in Algiers, Algeria. When the French Foreign Legion occupied the Fortress of Mazagran, they faced extreme heat conditions that forced them to create a drink that could refresh them while keeping them awake. This is when they created the first “café Mazagran,” which became popular in France once they returned.
Mazagran is also known as “Portuguese iced coffee,” and its preparation consists of adding iced espresso to a glass with lemon and ice. This preparation also features the addition of rum to the beverage, and it’s generally sweetened with sugar syrup.

Ingredients
  • 1 cup of black coffee (hot brewed)
  • ½ cup lemon juice
  • White granulated sugar or sugar syrup
  • Ice

Preparation
Make yourself a hot brewed espresso, and then wait for it to cool down for 5 minutes. Add the cup of espresso in a glass and then pour the lemon juice. Add sugar to your desired amount and the cubed ice. If you want a different touch to the recipe, you can add some vanilla extract or cinnamon powder on the recipe.
